Down by 22.5

Since I started elevating my exercise levels and watching what I’m eating, I’ve lost 22.5 pounds. It really hasn’t even been all that hard as of yet. I’m really enjoying my walks and work outs. I’m feeling stronger than I have in years, and walking down hills doesn’t scare me anymore. I’m so thrilled with how I’m doing so far. Today I made some really delicious chicken soup that’s nice and low in fat (I made sure to chill the broth so I could remove the fat after cooking the chicken and before I started making the soup. I used a recipe from a chef named Marcus Wareing, and he recommended cooking the chicken first. Skimming the broth, then cooking the vegetables in some reserved broth, just blanching them over a two to three minute period, then adding the blanching liquid back into the main of the soup broth. It resulted in a the vegetables having a much nicer texture, and I didn’t lose out on any of the flavor or nutrients the vegetables provide to the soup. Even Bernie, who is not a soup man, thought it was nice. I also made a light version of a Waldorf Chicken Salad to have in sandwiches this week. It’s really nice with apples and walnuts running through, and just a pinch of tarragon. I love the flavor of tarragon with chicken anyway, and I have a gorgeous tarragon plant growing in a pot in my back yard.

Anyway that’s the progress report. Inches and weight both still shifting downward. Go weight loss :)
