Quinoa Is Tasty

I gave quinoa a try in a salad this past Friday and it’s delicious. It’s easy to cook too. Very similar to rice or couscous in terms of how you make it. It has a kind of fresh but nutty flavor and a texture similar to couscous, but with slightly more bite to it. I mixed some lemon juice, tomato, mint and parsley through it and served it with grilled lamb, but it would go well with chicken too. Anyway, it’s nice to have a new grain to have with meals.

I saw my dietitian on Saturday morning, and she doesn’t think I should worry about needing lap band surgery. She says I’m making really good progress, she’s especially pleased with my measurements steadily going down. I’ve been feeling so good lately, really vibrant; I love my walking. I think it’s the reason I’m feeling so good lately. My husband is working on finishing our patio right now, but when he’s finished he’s talked about our taking mini-hiking trips, just to test out my walking. We’ll probably go up to Mount Coot-tha; it’s not really super mountainy or anything, that’s just the name of the park. It’s got paved trails throughout and little rest areas and different display areas. Not really hiking-hiking, but at least like a nature walk. I can’t wait.
